What do I get? I know 80W90 but do I get limited slip or non? Also what kind of RTV should I use?

I would stick with what is rrecommended. Check your build list. No sense in spending more when not needed.Idk I'll just get the limited slip, I remember reading that it can't hurt to put it in.

Also is it beneficial to clean out the housing with brake clean? I've seen some videos of people doing that

I do. It is amazing, even with only 35K on the clock, how much you will flush out. Also, flushing may help release any captured shavings/material/what-have-you into the drain pan, that you'd like to see in the event something's going on.
I used an entire can flushing it out at the same time I changed my diff cover. After 15-30 it will have completely flashed off and you'll be good to add fluids.

I already bought it haha, no biggie. Also I've read a lot that people use 75W90 but the mechanic who did my gears told me to use 80W90

yes that's fine to use. just don't want synth if your running an arb locker, but im assuming your running a factory elocker. youll be fine with that. I run 85w 140 in my rearend due to the lower 5:13 gearset but nothing wrong with that recommendation.
