Excluding Tires and a lift, what are the mods that are needed for the mud and sand?

no mods are needed really. as long as you have a good amount of recovery gear (tow straps, D Rings, possibly a winch, etc etc) to get you out when your stuck the Jeep can handle the rest.

I was thinking more about mods to the underbody and suspension

well you have factory skids installed already. the only one missing is the Oil Pan skid. other than that you should be fine since your only going to do mud and sand.
