My oil pressure has been between 30 psi and 60 psi what could be causing the high oil pressure?

When are you checking the pressure? Cold start? Operating temp? What weight oil are you using?

You could have some kind of clog in the oil pump screen. I have a oil pump on its tail end of life that started giving me a couple problems. (High and low pressure) ended up replacing it, the filter screen and the distributor.

Cold start only, then it drops down? Has it been loke this since you bought it only only just started, because it will always be higher on cold starts, at least every vehicle I ever owned with a pressure gauge has indicated that.
