Have you tried reverse sear? Might give you more consistent temps throughout and not have the more well on the outside.
I have not. Don’t really cook steak inside just because of the oil burning off. We don’t have good air flow thru our kitchen cause of the layout so I try to do it outside as much as I can.

I really like the eight burners! Hopefully we’ll see it loaded up with all 8 cranking.
I needed 2 30 inch ovens. No other room for wall ovens. I use the 24 flat a lot, otherwise I would have had 8 too.
Went with electric ovens this time, jury still out.
 
Did you go with a hood? We did and it's a gigantic pain in the ass for me - I keep whacking my head on it. Hate it.
Yeah I have one. Haven’t installed it yet though. It’s a big one but I think I’ll install it a big higher up. It’s something like 1200CFM so I’m not worried about airflow through it. More worried about air in my house being that it’s so tight with spray foam.
