I'm getting this smoker figured out. Two Pork shoulders and my first Brisket! 14-15 hours and it all came out awesome!

Looks awesome! What kind of smoker do you have? I need to get one of those side smokers. :thumb:

MTG, That looks Awesome! The Ocean is like the "Frosting on the Cake"

Thanks. It really does. I kept thinking I would love to move over there and have my jeep for cruising around from beach to beach...unfortunately, if I moved there I would likely only afford a small tent and 1980 something Toyota Tercel.

It's a Oklahoma Joes, sold at Wal-Mart. They have two sizes, this is the small one. I didn't want to spend too much money just in case it wasn't my thing, but I think it is my thing! But I got to tell ya, there is a lot to smoking meat than I realized. I have ruined a lot of meat! And just like a jeep I've done some modifications and I'm getting it down. I gotta say I was a little nervous about smoking a $50 brisket, but it came out fantastic!!

In peru this is call pachamanca. :) did you placed stones in the hole ?

Ya river rock and fire brick in the bottom of hole. Lit a huge fire with oak and manzanita let it burn down for 3 hours and wrapped the pig in corn husks and grape leaves and cooked it for 8 hours.
