Cooper STT

They're essentially the same size. The 315 will be a bit bigger and the load range E is something that I would recommend.
 
I had the 315/70/17s on my JKUR when we went to moab this year and they worked very well. Saw on your description you have a 2.5” lift. I had the same and it was plenty to clear the tires and still get good flex on the trail.

Are you wanting the stt pros? I just looked at Cooper's website, tire rack, and discount tire's. It doesn't appear Cooper makes a 35x12.5R17 for the stt pro.
 
I just checked coopers website tire specs for the stt pros. Though they don’t offer a 35x12.5 in a 17 they do for a 15. The 35x12.5R15 and the 315/70R17 have the same overall diameter at 34.57”. Tread width is .08” wider on the 12.5” at 10.08” and the section width is .5” wider at 13.1”.

Coopers

I’m running 315’s Coopers on my JKU and love them. They have done well off road as well as on.
They seem to wear well. I rotate every oil change so hopefully they will last awhile. Hope this helps.
