Prepping some din din for those of us that stayed in Shaver Lake last Friday night...grilled some ribeyes and wrapped up some Kokanee that we taught earlier that morning the n Shaver Lake...

Sorry. Just saw this. I keep it around 240. It takes about 1.5 hours per pound. These were each about 8 pounds. Once internal is around 205, I pull it. Around the 5 hour mark, I wrap them in foil so they don't dry out.
