What a treat last night. Stumbled across a Chinese restaurant in my old neighborhood. No signs no nothing except like 7x5 inches name plate by the door. When we set down I asked why no sign and the said that their philosophy is to get customers by the word of mouth.
We had a few dim sum rolls, oysters and the best Peking duck I ever had.
Will be going back indeed.

Bird is thawed, just mixed up sage, parsley, thyme, and rosemary in softened butter.

Will smear the butter under the skin tonight, bird goes on around 5 A.M. using cherry pellets for smoke, apple juice for spritz.
