Watcha cookin'?

After Christmas two years ago I went on the Zwilling website & got a full set of "Blemished" J.A Henkels pro knives for less than half price. Other than the bread knife having scales that didn't match exactly I couldn't see where they were blems.

ETA: I had to search through the website and find each piece al-a-carte to get the best deal... The sets always have stuff I don't want or don't need.
 
Prepping the smoked goose for afternoon din din...removed the wing flats for a reduction sauce

Smoked goose wings, a whole bottle of Pinot and some cloves...after reduced, adding a dollop of blackberry jam a a couple cubes of cold butter
 
Dried chopped cherries and a whole bottle of sauterne to be reduced for seared foie gras...

What is a good brand of knives to buy? Ours are dull and we’re just pretty generic, I’d like to get a good set this time

The brands that Ovie suggested are good ones to start with, but also like he said, there are some awesome custom makers out there that are now accessible that are making some really nice heirloom quality knives. They're spendy, but like anything else you get what you pay for. I started a collection this past year and am adding specific knife styles as I go. :thumb:
 
This shitty HDPE cutting board totally ruins the presentation, but my halfway decent cutting board was occupied. Our Christmas entre was a coffee/cocoa crusted tenderloin. It came out great.
