Third cook on the Req. Christmas Eve Prime rib. Still need to dial in my temps. Flavor is absolutely amazing. Smoked corn....why didn’t somebody tell me about this before.

Do you mind sharing why she turned vegan? I’m always curious why people make that change. No biggie if you don’t want to share.

Not 100% sure...a year ago she decided to only eat fish, then became vegetarian, but still ate cheese and dairy...which transitioned into vegan about six months ago...she’s going through some life changes, like taking a year off school to complete her yoga instructor training, and plans on traveling a year to resorts being a yoga instructor.

I’ve said this before...I love vegan food because it goes great with meat...

If you have fresh cherries, pit them and cut in half, then sauté in some butter until soft...if using dried cherries (I prefer tart), chop and just put them in the sauce pan...Pour in a split bottle of sauterne (ive used muscat too) and slowly simmer until reduced by 80% (you want it a bit syrupy)...then strain. Salt & pepper to taste...

The classic soufflé has the yolks and whites separated, usually with more whites. Jacques Pepin, famous chef, his mother married when she was young and didn’t know how to cook...and her husband loved soufflés...so she made this up herself. Super easy since you don’t need to separate the eggs, and comes out great every time. Even though Jacques is a classically trained French chef, he still makes this soufflé like his mother did
